Leaf or roots

I have started moon planting this year and have read a couple of books on the subject but I am confussed on a couple of things are cauliflowers leafs or flower I would say if broccoli is a flower so should a cauliflower also celeriac is this a root or a leaf one book says one thing and the outher books says something different help please
